NEVER purchase your salmon out of season. And make sure it's wild-caught.

When the Copper River Salmon hype hit Washington grocery stores in mid-Maywe bought about a dozen full salmon filets, chopped them into serving sizes, vacuum-packed them, and stored them in the freezer.
